Food Waste Recycling: Every Route for Your Kitchen Scraps

There are five realistic routes for kitchen scraps: kerbside organics collection, a community drop-off point, a home compost heap, a bokashi bucket, or a worm bin. Which one suits you comes down to two questions — do you have outdoor space, and do you need to deal with meat, dairy and cooked food? A backyard heap handles the largest volume for free but takes only raw plant material. Bokashi takes everything including meat, but needs somewhere to bury the output. The comparison below sorts it out.

Getting this right matters because of where the alternative goes. Food buried in landfill breaks down without oxygen and generates methane, a far more potent greenhouse gas than carbon dioxide. The same material composted aerobically produces a soil amendment instead.

Kerbside organics collection

If your council or hauler offers it, this is the easiest option by a wide margin and takes material no home system can. Some jurisdictions have made it mandatory — Vermont, for example, bans food scraps from household trash entirely.

Accepted materials vary, so check your specific programme. Common inclusions beyond plant scraps are meat, bones, dairy, cooked food, and often soiled paper. The frequent exclusion is “compostable” plastics and bioplastic liners, which many facilities cannot process despite the labelling.

Community drop-off

Where there is no kerbside service there is often a drop-off: farmers’ markets, community gardens, transfer stations, and some food co-ops run them. You collect scraps in a lidded caddy, freeze them if you’d rather avoid smells, and drop them weekly.

What actually happens to collected food waste?

Two industrial processes, and which one you feed changes the output.

Windrow or in-vessel composting breaks the material down aerobically at high temperature, hot enough to kill pathogens and weed seeds — which is why municipal facilities can accept meat and cooked food that a backyard pile can’t. The output is compost sold or distributed for landscaping and agriculture.

Anaerobic digestion breaks it down in sealed tanks without oxygen, capturing the methane as biogas for electricity or heat and leaving a nutrient-rich digestate for farmland. It turns food waste into energy rather than only soil.

Some material also goes to animal feed, though rules on this are tightly regulated and vary by jurisdiction.

Home composting

A heap or bin in the garden is free, handles the largest ongoing volume, and gives you the finished product. The constraint is that a home pile rarely gets hot enough to safely break down meat, fish, dairy or oily cooked food, and those materials attract rodents besides. Stick to raw fruit and vegetable scraps, coffee grounds, tea, eggshells and garden waste.

Bokashi: the one that takes everything

Bokashi is not composting — it is fermentation. You layer scraps in a sealed bucket with bran inoculated with microbes, press out the air, and leave it one to two weeks. Because it is anaerobic and acidic, it handles meat, dairy, bread, cooked food and citrus, all of which defeat a normal heap.

The catch is that the output is not finished compost. It is pickled, acidic pre-compost that still needs to be buried in soil, added to a compost pile, or dug into a trench to finish breaking down over a few weeks. If you have no soil at all to bury it in, bokashi solves half your problem and leaves the other half.

It suits apartments well because the sealed bucket does not smell in the way an open caddy does.

Worm bins

A worm bin — vermicomposting — runs cooler and faster than a heap and produces castings that are excellent for containers and seedlings. Worms take fruit and vegetable scraps, coffee grounds and tea, in modest daily quantities. They will not take meat, dairy, oily food, or large amounts of citrus and onion.

A bin can live under a kitchen sink, in a garage, or outside in shade. The main failure mode is overfeeding: add scraps faster than the worms process them and the bin turns sour.

Which should you choose?

Reducing the volume first

Recycling scraps is the last step, not the first. Most kitchen waste is not peelings — it is food that was bought and never eaten. Storing produce properly and knowing how long things actually keep prevents far more waste than any composting system processes.
